Ingredients:
• 200 g Nachos
• 300 g cooked mince
• 1 can (410 g) Mexican tomatoes
• 250 g sour cream or crème fraîche
• 250 ml (1 cup) grated Cheddar cheese
• 250 ml (1 cup) grated mozzarella cheese
• 250 ml (1 cup) fresh coriander or parsley
• 1 chilli, finely chopped
• 125 ml (½ cup) readymade guacamole
Method:
- Preheat the oven to 200°C and arrange the nachos in a large roasting pan or ovenproof frying pan.
- In a large frying pan heat the mince and tomatoes together until the flavors have blended. Spoon the mixture onto the nachos and top with large spoonfuls of sour cream or crème fraîche.
- Scatter the cheese on top and bake for 10 minutes or until the cheese has melted.
- Scatter the coriander or parsley and chilli over the nachos and spoon the guacamole on top.
Tip: If you have time and want to save money prepare homemade guacamole: mash an avocado and mix with chopped chillies, lemon juice and fresh coriander to taste. Season with salt and freshly ground black pepper.
